I think it would be impossible to say which one is best.
My own favourite is "Songbird", which was written, and performed by Christine McVie from Fleetwood Mac, (first released on the album Rumours, (I think).
It is rarely that a cover artist can produce a version of a song as good as the original, but the late Eva Cassidy sang a version of Songbird which is really beautiful.
