using a kit like old el paso or taco bell
or make with beef or turkey or chicken grouned and use salsa for the flavoring to the meat or use paparika or cayenne garlic to flavor it

Go to the store and look in the Mexican foods section for these packets of Taco Seasoning Mix (they come in several brands). Oddly enough, my family like the Taco Bell brand mix the best, but the Ortega Taco brand is also quite good. You need 1 pound of ground beef for each packet. Follow the directions on the packet (brown beef, drain, add packet and water, simmer). Put meat into taco shells and add your favorite toppings (cheese, lettuce, tomato, sour cream, etc).

Crispy Fish Tacos Recipe courtesy Tyler Florence

Peanut oil, for frying
2 cups panko bread crumbs*
3 eggs
Kosher salt and freshly ground black pepper
2 pounds halibut, snapper, or other firm flesh white fish
8 corn tortillas
1/2 head napa cabbage, shredded
Pink Chili Mayo, recipe follows
Lime wedges, for garnish
*Available in the Asian section of your market.


To fry the fish: Fill a large heavy bottomed pot about 1/3 full of peanut oil. Heat to 375 degrees F. While the oil is heating, put the breadcrumbs into a shallow dish. Break the eggs into another shallow dish, season with salt and pepper, and beat them with 2 tablespoons of water. Cut the fish into 1-inch wide strips. Dip them into the egg, then coat them well with the breadcrumbs. Set aside and let them rest for 10 minutes. Cook the fish a few pieces at a time until golden brown and cooked through, about 3 to 5 minutes. Drain on paper towels.
To make the tacos: Heat a dry cast iron skillet over medium heat. Warm a corn tortilla in the pan until it softens, about 30 seconds. Place a fish strip on it, top with some of the shredded cabbage, and a big dollop of Pink Chili Mayo. Squeeze on some lime juice, roll up, and eat!

Ok well i work at taco time...(i know-yuck) but anyways i know how to make the BEST tacos ever. Ok you can use hard or soft shell- I perfer hard. First you ad the cheese...only a very little bit. Then you add the beef and again only a small amount. Then a little more cheese. Now you add some shredded lettus. Then you add some sour cream..little bit. and some salsa to taste.... They are very good if i do say so myself!

I made the best taco's the other night... I cooked a boneless pork roast in a large pot, added jerk spices covered it with water and put a lid on it, cook on low for about 3 hours. ( also can do in crock pot)
When the meat was tender I took it out of the pot, shredded it and put in back in the pot with the liquid and let it cook until the liquid was gone. It was the juiciest meat. I set out the meat, lettuce, cheese, sour cream & salsa.

Mine's a little stranger. I fry up beef and a box of Zatarain's dirty rice mix. Put that in the shell of choice with some cheese. And not just tacos, it's an excellent enchilada stuffing!

We simply cook up the gound beer, or diced chicken, add a seasoning envelope or two to the meat and stir away. Serve on hard shell or warm tortillas with whatever we love to put on tacos. Easy.
