Hash Brown Casserole Recipe

1 (1.5-2 lb) package frozen hash brown potatoes
2 cups sour cream
1/2 cup chopped onions
2 cups shredded cheddar cheese
1 (10 1/2 ounce) can cream of mushroom soup
1/2 teaspoon salt
pepper
1/4 cup butter or margarine, melted

1. Butter a 9x13 baking dish.
2. Break up frozen hash browns and put into dish.
3. In a bowl, mix the sour cream, onion, cheese, soup, salt, pepper and butter or margarine.
4. Pour the mixture over the potatoes and mix well.
5. Bake in a 350° oven for 1 hour, or until lightly browned on the top.
6. May be assembled ahead and baked just before serving.

My mother makes that all the time and it is good and for the people that have the silly comments about it being a breakfast it's not well not this recipe....

But she usually makes baked boneless chicken breast, or a ham or even meat loaf that is good with that with some corn and some rolls.....

I make that recipe all the time, cept I add Frenches cheddar fried onions to the top five minutes before I take it out of the oven. and I thaw my hash browns in the micro (saves from getting that raw potato taste).
we serve ours as a side dish sometimes with brats on the grill, hamburgers, ham whatever. though if you are going to do it as a main dish you could have garlic bread with it and a nice salad.

You should have something that most definitely neutralizes the greasyness and high caloric contents of the caserole. Try the following and its really good for you. I dont know the name for this but its really good people in different countries drink it to balance the excessive oil intake.

Put a cucumber (peeled) in the chopper. Add some mint leaves, salt, peper, and 1 litre yogurt (will serve about 5 250 ml glasses). Blend till it gets bubbly. Enjoy.

I would make a bowl of fresh fruit with a strawberry glaze to drizzle over the top. I would also serve the main dish with some hot bread or toast.

We are having pulled pork sandwiches. It's one I have to plan ahead for because the pork takes about 12-14 hours to make in the crock pot. For the rest of the week: Tuesday: beef stew (made from leftover pot roast) and biscuits , Wednesday: hamburgers/hot dogs on the grill, Thursday: chicken and dumplings in the crock pot, and Friday night is pizza night (homemade pizza--but only if our oven gets fixed before Friday--it's been broken since Mother's Day), leftovers on Saturday

How about Kielbasa? I cut up the kielbasa and brown it in a frying pan. Cheap and goes great with it. And cream of celery is a great substitute to the cream of mushroom.
