Sounds way too strict to me, and chances are if that is your plan you won't stick to it. I don't want to sound cruel, but for any lifestyle plan to work, it has to be realistic.
Calories should include fruits, veggies and proteins, and should be no less than 1200 a day. There are many websites you can go to and insert your height and weight to find your ideal weight and get an idea about your ideal calorie intake. SparkPeople.com is a good one I would recommend. 3 hours a day of exercise seems extreme. Walking for an hour a day and doing strengh training 3 days a week sounds fine, but don't push to extremes or you will make yourself ill. A realistic goal would be 30 pounds in 3 months. 40 could probably be done, but it would be pushing it for health. If you lose weight super fast, it is just more likely to gain it back. It is healthier to do it slowly.

I don't know if it's a good idea to start out at 3 hours for your gym workout. Experts all agree that it is best for your body to gradually build up your stamina for long workouts. If you're not used to working out that intensively at the moment, it might be best to go for just one hour at first, and then work your way up to three hours over the course of the summer. Same goes for the walking- start out at maybe 30 minutes and then build it up from there. If you try to do too much too soon, you could be putting your body at risk for overexertion, pulled muscles, stress fractures, etc. That sounds like an excellent food plan, however. Good luck!

I'm not sure whether you will be able to lose 40lbs in 3 months but I recommend that you have a heavier breakfast since it is the most important meal of the day and will help to keep you full. Try something like oatmeal with the fruit and some black coffee. Remember that breakfast is the beginning of the day and so the calories you take in the morning won't really add onto the weight since you'll burn it throughout the day. Eating most of your carbohydrates, such as cereals, breads and fruit, earlier in the day is recommended as the body does not need them to be eaten at night: you've already got a full days storage of carbs in your body.
Some good food advice my mum always gave me and continues to remind me is the Adelle Davis quote "Eat breakfast like a king, lunch like a prince, and dinner like a pauper."

yeah i like you'll work yourself out you're only suppose to work out 30 mins a day and the morning you should have special k cereal and fruits because breakfast is the most important meal of the day then lunch yogurt and cereal again if u want and then dinner veggies and meat
