Mama’s Spaghetti and Meatball Sauce
"The trick to this recipe, as in most Italian cooking is to use the best ingredients you can find. The choice of meat is up to you, but I try to add a piece of both sparerib, and beef to the sauce, and prefer a combination of beef and veal, or beef and turkey for the meatballs."
For The Sauce:
2 Tbsp. Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Pork, Beef, or Chicken)
Salt & Pepper
1/4 Cup Chopped Basil
1/2 Tbsp. Dried Oregano
1/2 Tbsp. Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 (26 oz. can/box) Pureed Tomatoes
About 5 Cups water
3 Tbsp. Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice
Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and sauté until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.
Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 Tbsp. of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.
Meatballs:
1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt & Pepper
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water
Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Sweet & Sour Meatballs
Ingredients
1 lb. ground beef
1/2 cup breadcrumbs
1/4 cup milk
1/2 tsp. Seasoned Salt
1/2 tsp. Worchestershire sauce
1 egg
2 Tbsp. brown sugar
20 oz. can pineapple chunks in heavy syrup
1 cup Sweet Pepper Jalapeno Jam
1 small sliced green pepper
Prepared rice
Directions
Combine first 6 ingredients; form into 1-inch balls. Brown over medium heat in large skillet; drain. Combine brown sugar, pineapple with syrup and Sweet Pepper Jalapeno Jam in same pan used to fry meatballs. Heat to boiling; stir constantly. Reduce heat; add meatballs. Cover; simmer for 10 minutes, stir occasionally. Stir in green pepper. Cover; simmer an additional 5 minutes until crisp-tender. Serve over hot rice. Makes approximately 20 meatballs.

Swedish:
1 1/2 lbs ground round
2 cups of fresh white bread crumbs (make in your blender)
2 Tbls worchestershire
1 egg
1 teas ground allspice
1 teas ground mustard
salt
pepper
1 Tbls water
Combine all ingredients except meat, stir until you make a consistent mush...lightly knead in the beef until just uniform. Roll meatballs into 1 1/2 " balls and pan fry unit cooked through..turn as needed. Make a brown gravy if desired and serve.
Italian:
1 1/2 lbs ground round
1 cup of Progresso italian bread crumbs
1/2 C Parmesan cheese
1 egg
1/2 teas ground oregano
1 C your favorite jar spaghetti sauce
salt
pepper
Combine all ingredients except meat and sauce, stir until you make a consistent mush...lightly knead in the beef until just uniform. Knead in the sauce. Roll meatballs into 2 " balls and bake on a cookie sheet with sides, about 1 inch apart, at 350 for about 45 minutes. Serve with more sauce and pasta.

Mix together the following -
- 1+1/2 lb. (pound) of any kind of raw ground meat, any combination
- about a cup of something dry, like bread crumbs, cracker crumbs, oats or crushed cereal
- about a cup of something wet, like milk, tomato juice, beer, applesauce, canned pumpkin or mashed potatos
(If you used fresh bread crumbs use something less wet. If you used dry bread crumbs use something more wet.)
- 1 large egg
- about 1/4 cup of chopped fresh onion, or any combination of things like onion, carrot, apple, garlic, shallot, mushroom or dried fruit
- about 1+1/2 teaspoon salt, spice and season (suggestion: use about 1 teaspoon of dried spice or combination of spices)
Shape into balls about 1+1/2 inch in size. At this point you can put them on a cookie sheet, making sure they don't touch, stick them into the freezer for about an hour or two, then put them into a freezer zip bag. When you want meatballs you can pull just a couple out of the bag, thaw and continue.
You can bake, fry, or a combo. Baking would be in an ungreased oblong 13x9" in 400 F oven for about 20 to 25 minutes. Pan fry over in a little oil at medium heat, turning meatballs to brown evenly (but don't fuss with them so much they start to fall apart) for about 20 minutes. If you don't want to eat them right away you can do the same freezer trick mentioned above.
...Now you have to decide what kind of sauce you'll use, and what kind of bread, rice, pasta, noodles you'll serve them with.

PORCUPINE MEAT BALLS
SAUCE:
1 can tomato soup
1 lg. can tomato sauce
1 can water
1/4 c. catsup
3 whole tomatoes, cut up
1 tbsp. chili powder
1 tsp. salt
Meat Balls:
1 lb. hamburger
2 eggs
1 c. uncooked rice
1 tbsp. onion salt
Brown meat balls slightly. Put into sauce. Simmer all 1 to 1 1/2 hours.

I sometimes make mine a little different with eggs spices, and some cooked flavored rice. They are yummy, and a little different.
