Some nutrients leech out into the vinegar, but most remain. The flavors of some vegatables will change drastically, depending on the spices you use.

Go to the store and read the label for pickles and record the numbers
Go to the canned vegetables section do the same
go to a good cook book check the list of nutritional values for the veggies you missed.
You do the work.
Totally UN Important to me.
Food is to be enjoyed not worried about.

You loose nutrients when you cook them before you pickle them. Of course most pickling recipes call for lots of salt, so you get lots more sodium in pickled products.

I would think that the vinegar would destroy some of the vits and alkaline , however if you use cider vinegar you would balance out the nutrition because it is rich in minerals

um, no. The veggies are cut off from their nutrient supply, yes (the plant) but how else are you going to eat them?
