The classic is Pullet A L'Orange.

Just broil chicken as usual (Salt, Pepper, Sage, Thyme) and baste/serve with this Orange Sauce:

3 tbsp Sugar
1/4 cup Red wine vinegar
10 1/2 oz Can beef consomme
3 tbsp Port wine
2 tbsp Cornstarch mixed with 1/4 cup water
Grated peel of 1 orange
2 tbsp Grand Marnier
1 tbsp melted Butter

Melt butter, add liquids, stir in sugar, thicken with cornstarch mixture. Flambe'. Drink leftover booze.

Grilled Raspberry Chicken

• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)

Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.

Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

I make a yummy chicken salad with fresh Michigan cherries.

cooked chicken chopped up
enough mayo to coat the chicken (low fat or regular)
small handful of sliced almonds
handful of fresh cherries (pitted and chopped)
squeeze of lemon juice
a little bit of vidalia onion (chopped)
teaspoon of milk
salt and pepper

mix it up and serve alone or on whole grain bread with sharp cheddar cheese (my husband likes it with provolone).

i call it PININYAHAN which means with pineapple.
1 lk of deboned chicken legs
1 pint pineapple chunks
1 can cream
3 pcs chicken sausage sliced 1/2 inch thick
salt to taste
garlic and onion for sauteeing
3 tbsp olive oil

saute garlic and onion, add cchicken slices(desired size) let its own juice come out, add pineapple, simmer, add sausage, simmer, when its almost done pour cream and boil slowly and season with salt
