In order from easiest to most difficult:

1. Spanish, romance language w/many similarities to English
2. French, see no. 1
3. German, any language wherein the fish is a she, the scales on which you weigh it are a he, and the fishwife who sells it is an it, has gotta be harder!
4. Mandarin Chinese, not only completely foreign, but a tonal language wherein the tone and pitch of your voice defines the meaning of the word. You can say "thanks", but if you don't drop the tone at the end and draw out the middle in a slightly higher tone, you're gonna say "pig". Toughie, unless you grew up with it.

Mandarin Chinese is definitely the hardest, because the phonetic sounds are so different, and unless you listened to them routinely as an infant/toddler, you brain is not wired to handle them. Furthermore, Mandarin has four tones which are practically impossible to get straight! I should know .. I live in Asia... the taxi driver always snickers when I give him directions. German is a "gutteral" language, which can also be hard to pronounce at times. French also has a very unique way of speaking that English speakers can really make a mess of. Spanish is definitely the easiest in my opinion, and many of the words are very similar to the English. If you are still pretty young, I say go for whichever you think you might be able to use someday. If you are middle-aged like me, good luck with all that memory work! LOL

Chinese is hardest. It takes a month to write a letter. Spanish is the easiest by far. It is also more practical in this day and age for when you want to get a job in the future or present. I took 4 years of German because my ancestry was and I cannot remember squat. The French don't bathe.

French or German would be the easiest, I know them both, and Mandarin Chinese would be the hardest.
