I am confused why bitstream is better for Dolby 5.1 surround sound and such, bur LPCM is better for Dolby True HD surround sound.

bitstream usually refers to compressed audio, such as Dolby Digital, DTS, or MPEG.

LPCM is uncompressed audio. You can get the best quality with uncompressed LPCM multi-channel audio; however, in most DVDs LPCM is just 2-channel audio. In that case, bitstream (Dolby Digital or DTS) is the only way to get multichannel audio.
Dolby True HD is compressed - but lossless (that is, you don't lose any of the LPCM quality), so you get the best of both words: highest quality and lower bit rate.

If you are listening to the sound in stereo then you won't notice any difference.
