even the most courageous guys, cocky guys, confident guys, they get shy once they get with me like when we start dating..they start off a little aggressive than they become like a little kitten from a fiery tiger..I mean they can't hold my hand, kiss me, hug me, without asking me or getting nervous and shy..

Guys tend to be shy, because they're afraid to offend the female their with, likely need to settle in with being comfortable with you & what you like & dislike (and she's likely pretty too)

My first thought was that you must be "drop-dead gorgeous," to the point of making your guys fear that they're playing out of their league.
And then I saw another possibility: There really are "sensitive New Age guys" out there, and a lot of others that hope you'll think they are. So maybe they're trying to be polite, while internally salivating. You said in your other version of this question (see link below) that they back off "like when we start dating," which would tend to support this; they've got things started, then and don't want to mess it up.
In either case, let me offer you a few lines of dialog: "You're ASKing me if you can hold my HAND, Chris? [Smiling broadly:] I'm insulted; I really thought you couldn't keep your hands off me if you tried. [NOT smiling:] Don't worry--I'll let you know before you go too far!"
