I know hard boiled eggs and mayo.....but what else can you add to make it really good?

Here is a recipe for a tasty egg salad:

INGREDIENTS
8 eggs
1 tablespoon mayonnaise
2 tablespoons prepared Dijon-style mustard
1 teaspoon dried dill weed
1 teaspoon paprika
1/2 red onion, minced
salt and pepper to taste
DIRECTIONS
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
In a large bowl, combine the egg, mayonnaise, mustard, dill, paprika, onion and salt and pepper. Mash well with a fork or wooden spoon.
Serve on bread as a sandwich or over crisp lettuce as a salad.

Chopped hard cooked eggs, sweet pickle relish, good mayonaise and curry powder! Add some fresh ground pepper, a dash of salt and its wonderful on sesame crackers.

I also add a little pickle relish and tiny pieces of chopped bacon. Yum1

You can add some red onions and celery. if you want some heat then cayenne pepper or just pepper and salt. you can even get creative and add some red pepper if yo wish.

I put in mayo, salt, pepper and celery. Then I eat it with a rice cake
