I think the water content in cabbage will be too high for freezing, so that when you thaw it, you'll get a mush. Just try a little and see how it goes. Perhaps a good airtight container and refrigerating would be a better option.

It would probably turn out like frozen lettuce. It would get mushy and slushy. Blanching is done to preserve color and kill enzymes that will "age" the veggie. Items usually blanched would be broccoli, asparagus etc.
