EASY LEMON DESSERT
2 eggs, beaten
juice of 1 1/2 lemons
1 cup sugar
1 cup whipping cream
1/2 cup graham cracker crumbs
Combine ingredients and cook in a double boiler until thick. Allow to cool. Whip 1 cup cream. Fold into the lemon mixture.
Cover a shallow square glass pan with graham cracker crumbs, or alternatively, use a glass pie dish. Spread the lemon custard mixture on top.
Refrigerate until ready to serve. Cut into squares if a square pan was used, or wedges if served from a pie dish.
This recipe has been a Summertime favorite which has been in our family for over 60 years.
Variation: These can be served in custard cups for individual servings.

DESSERT SAUCE

3 t. brandy (may be omitted)
Bread Pudding:
3 t. soft butter
3/4 c. sugar

8 c. bread cubes cut to 1" square or smaller (sourdough loaf or any heavy bread)
1 3/4 c. fresh blueberries

Prepare Golden Dessert Sauce:
In medium pan, combine butter and sugar. Cook and stir over low heat until butter is melted. Stir in cream, and if desired, brandy.
Bring to a boil while continuously stirring; reduce heat. Boil gently, uncovered, for 5-10 minutes or until sauce is slightly thickened. Refrigerate if not using in 2 hours. Reheat when serving.
In a large mixing bowl, beat butter and sugar with electric mixer on med/high speed until well combined. Add eggs and vanilla; beat 2-3 minutes or until fluffy. Slowly stir in milk.
Place bread cubes in extra large bowl; pour milk mixture over the bread and mix well, soaking all cubes. Let stand 5 minutes.
Gently stir blueberries into bread mixture; transfer to an ungreased 3-quart baking dish. Combine 2 tablespoons sugar and cinnamon; sprinkle evenly over mixture.
Drizzle 1/3 cup of Golden Dessert Sauce over top.
Bake about 35 minutes or until knife inserted comes out clean.

1/4 cup sugar
1/4 cup unsweetened cocoa powder
2 Tbsp cornstarch
Pinch of salt
2 cups whole milk
1 large egg
4 ounces semi-sweet chocolate chips
Four 6-ounce ramekins or custard cups
1 Whisk together the sugar, cocoa powder, cornstarch, and salt in a heavy 2-quart saucepan. Gradually whisk in the milk. Bring to a boil, whisking constantly, and boil, whisking, until pudding is thick, about 3 to 5 minutes. Remove from heat.
2 Immediately beat the egg lightly in a medium, heat-proof bowl, such as a hard plastic or ceramic mixing bowl. Very gradually add the hot chocolate mixture to the egg, whisking constantly. Whisk in the chocolate chips until they are melted and the mixture is smooth
3 Pour the pudding into the ramekins or cups. If you want, cover the surface of each of the pudding cups with some cut out wax paper to prevent a skin from forming on the top of the pudding. Refrigerate, covered, until cold, at least 2 hours.

Duncan Hines brownie mix with pecans! That's a great start. Southern style no bake cheesecake; 1 can sweetened condensed milk, 1 package of ROOM TEMPERATURE non/flavored cream cheese, 1 graham cracker crust, 2 tablespoons of real lemon juice. Heat the graham cracker crust AFTER YOU HAVE MIXED THE INGREDIENTS FOR ONLY 1 1/2 MINUTES IN THE OVEN!!! Use a hand mixer to soften the cream cheese more, add in one tablespoon of real lemon juice, then add the entire can of sweetened condensed milk, then add in the other tablespoon of real lemon juice. Once thoroughly mixed, pour into the heated graham cracker crust and refrigerate for one to two hours (until it is completely in a molding). Enjoy!
I hope this helps.
Always remember that desserts is STRESSED spelled backwards.

My favorite desserts are strawberry tarts and chocolate dipped strawberries. Dipped strawberries are easy...first wash off some strawberries (ones with a stem work best but you can also stick a stick in them to hold). Melt a big chocolate bar (I recommend Cadburry's chocolate) and dip. Then place them on foil and put in the fridge to harden.
The tarts are also easy. Buy strawberry glaze and those small graham cracker cases (or a big one if you want). Chop up the strawberries and coat them with the glaze. Put a layer of whipped cream on the bottom of the cracker case and add the chopped/glazed strawberries on top of that. Then finish it of with a little squirt of the whipped cream on top for presentation.
Those are my favs anyway...hope this helps!
Cheers!
