My fave would have to be a strawberry pie. Here is the recipe my family has used for ages and it is delish! I hope you will try it! Yum! Have a Blessed day! :)

Strawberry Pie

1 cup granulated sugar
1 cup water
2 1/2 teaspoons cornstarch
1 large box strawberry gelatin
1 quart strawberries
1 baked pie shell ( I like to use a graham cracker crust)
Whipped topping

Combine sugar, water and cornstarch in saucepan. Cook until thick. Cool for 8 minutes. Add gelatin. Stir well. Pour over strawberries. Pour into baked pie shell, and place in refrigerator to chill.

Serve with whipped topping.

Yum!!!

I also like to have fresh fruit with fruit dip. I like to take a pineapple and cut it into two halves down the center and core it out. I then put my dip in the pineapple and serve with the fresh pineapple, grapes, strawberries, peaches, or any other type of fruit that is in season. Here is the fruit dip recipe that I use.

Fruit dip

1-8oz. cream cheese; softened
1 container marshmellow cream

Blend together until creamy and chill.

Summertime to me say BBQ! Fruit Kabobs are my dessert for this summer...you can use any combination of the following. Apples, acorn squash, pears, peaches, pineapple, mango, dates...you name it the list could go on and on. So first you would soak your skewars in just regular water then cut your fruit into 1 in cubes then drizzle the fruit with olive oil and place on a hot grill for just long enough to get some good grill marks, The natural sugars will carmelize quickly so keep constant attention on kabobs so they won't burn. This next step is purely optional but I like to drizzle with olive oil again and sprinkle grated coconut. The flavor is amazing! Enjoy

Prepare your tastebuds:

Poached pears with chocolate sauce

You will need 2 green pears, halved and peeled.
1 cup of apple juice
2 T sugar
1 T cinnamon
1 t cloves (optional, dont go buy them if you dont have them)

1 cup of semisweet chocolate chips
2-3 T skim milk
1 T sugar
pinch of salt

Put the applejuice, cinnamon, cloves and sugar in a sauce pan with the peeled pears cut side down. If there isnt enough liquid to immerse the pears at least halfway then add more juice or water. Poach on medium heat for about 10 minutes covered and test for tenderness. When they are soft but not mushy remove from heat.

While the pears are cooking melt the cup of chocolate over low heat, in a double boiler if possible. Or put a steel bowl over boiling water. When melted mix in the sugar, milk, and salt.

Serve a pear half with a little juice, hot, with the chocolate sauce drizzled on top.

YUM!

For bonus points use a natural sugar like sucanat or maple syrup instead of sugar.

This stuff tastes like it'll clog your arteries -but its really pretty good for you.

You'll need cool whips, frozen or fresh strawberries, a "trail mix" type cereal (like Post Trail Mix) and ovaltine (as a powder).

Divide the cool whip in half, To one half, add juice from thawed strawberries (or make juice by adding sugar to freash ones and letting them sit) and mix it into the cool whip, so it turns pink.

Add ovaltine to the other half, so it looks like fluffy chocolate.

Take cocktail glasses (or tumblers, for the king size version) and start with a dollop of c/w (either flavor) then some strawberries, then a sprinkle of trail mix, the OTHER flavor of c/w -repeat to the top of the glass. You can put a cap of c/w on top; half of it pink. half brown. Looking at the side of the glass, you should see layers: c/w, berries, a thin layer of trail mix, etc., etc.

By this time, the c/w may be approaching "melt down," so pop the finished glasses in the freezer to stidden 'em up a bit -but don't let them get frozen solid.

Yummy -and not too bad for you. C/w is mostly air, the ovaltine has good stuff in it.

Try variations with other kinds of berries or mandarin oranges!

umm, here are a few i could think of.......

- Lemon Blackberry Parfait
- Cranberry Hazelnut Coffecake
- Chocolate Chip Cheesecake Muffins (my favorite, plus they have hardly any fat)

Damn, I'm getting kinda hungry now...

To prepare healthier desserts you could:

- Add some fresh fruit which provide vitamins, minerals and other healthy nutrients.
- You could add some nuts too. Nuts are very healthy because of the type of fatty acids and vitamin E they contain. They also have a high energy (calorie) content so don't overdo it.
- Add some cereals which provide fiber, vitamins and minerals.
- Avoid excessive use of toppings like cream or chocolate.
- Instead use milk, yogurt or fruit juice that have less fat and energy (calories). In addition try to increase the range of desserts you give your child which will also improve the variety of nutrients provided. Of course, the importance of variety holds true for any other meal, too.

Fresh fruit with honey, nuts, yogurt, sherbet, even a splash of liquor, port, wine, balsamic vinegar,or sherry and lots of fresh mint or basil. Macaroon cookies are my favorite because you can make them easily and don't need to use a boat load of sugar. You can also make a fruit crisp like peach and blueberry or strawberry and rhubarb. You can use butter substitute and raw sugar for the topping if you wish. Good Luck

6 ounces vanilla yogurt
4-6 strawberries, sliced
1/4 cup blueberries (fresh or frozen)
1/4 cup pecans, chopped

Layer 2 oz. yogurt, 2-3 sliced strawberries, 1/8 cup blueberries and 1/8 cup chopped pecans in parfait glass.
Repeat layers. Top with remaining yogurt.
Garnish with a few chopped pecans and/or a strawberry if desired.

INDIAN KULFI
(ice cream)

kulfi

Ingredients

1 litre milk
1 tin condensed milk
100 gms khoya
1 tbsp flour
1/2 tsp saffron strands or powder
10-12 almonds, chopped and blanched

Method
Mix together milk, condensed milk, flour and khoya. Bring to boil, stirring constantly.
Reduce heat and cook for 10 minutes, or more until it thickens slightly, stirring constantly. Remove from fire and cool. Add almonds and saffron dissolved in one teaspoon of water. Fill into kulfi moulds and freeze overnight. Serve with falooda
