When I order a (neat) Manhatten at the bar, sometimes it has sort of a bitter taste (the way I like it), and sometimes its much too sweat. When I order it, how should I specify how to make it?

Tell the bartender (or peson taking your order) that you want a regular manhattan but not overly sweet. Normally the amount of sweet vermouth and cherrry juice causes the sweetness. They can cut down the amount of vermouth to help.
Personally I enjoy a Dry Manhattan. It is made with the dry vermouth and without bitters..

Some Manhattan recipes include Aromatic Bitters , if you like it bitter, be sure this is in there and other recipes do not, also opt for dry vermouth instead of sweet vermouth.

oder it the way you do but watch how they make it.every bartender has their own way of making a drink.when they make it just the way you want it,remember how it. don't ever accept a drink you don't like.send it back and get what you want.

First of all there is the Question , do i like Bourbon or Brandy ?? Then you tell the Bartender if you like it Sweet or not.......that's it.
