You could say a lot of things depending on the relation you have with that person:
Saludos a todos (say hello to everyone)
Me despido y espero tu respuesta (goodbye and i will be waiting for your answer)
Te mando un abrazo - Te mando un abrazo y un beso (Hugs - Hugs and kisses)
Me da gusto saludarlos y seguiremos en contacto (I am happy to say hello and we'll keep in touch)
Cuidate-Cuidense (plural) - Take care
Te extraño - los extraño (plural) - Miss you

I wouldn't end a letter to a host family with "Best regards".
Saludos = greetings (too bland)
besos = kisses - if appropriate
abrazos = hugs - this doesn't convey too much intimacy
abrazos (fuertes) = (fuertes = 'tight' but conveys 'big')
hasta pronto = conveys until later but hopefully soon.
