What cheeses do not freeze well.

Yes but you will get different results with different cheeses. Seems like freezing slices of " fake cheese"(processed) doesn't work well but I have had good luck with solid block cheese, especially the harder ones. I have frozen Cheddars and Colby's pepper cheese etc. They can get a little crumbly but much better than frozen slice of processed fake stuff. I used a Seal-a-meal and that seems to help some.

No the cheese will end up cracking. And drying out.

yes and it does not crack. I freeze it all the time.
