I'm planning on making a deli platter with mini sandwiches. What type of bread do I use? Do I just use french bread and cut it into smaller squares? Thanks.

Small dinner rolls work fine. No muss or fuss..just fill and serve. Lots of different types and textures...go for the one that appeals to you the most.
If you want to use french or Italian bread. Make one big sandwich and then slice into smaller bite size portions.

Use both white french bread and whole wheat. The platter looks amazing that way. Also throw some cilantro and plum tomatoes on the platter, it look amazing.

Call your local bakery or deli - they sell mini loaves of a wide assortment of fresh baked breads. Choose a few different ones so everyone can fix something they like.....

You can basically use any bread you want. Why not do a variety, some dark, some light and how about making some on different flavors of tortillas, roll up and cut to make pinwheels.

Baguette is used Traditionally, because it is a smaller Round,
you can also use Brioche which is a Egg Bread similiar to our Toast. On the Brioche you first toast it and then cut off the
Rind.
