Here's an Asian recipe:
Simple Spinach and Garlic Stir-Fry
1 tablespoon vegetable oil
8 cloves garlic -- minced
3 bunches spinach -- washed and cut in
2 inch piece
1/2 cup vegetable dry sherry
1 teaspoon sugar -- (or 2 teaspoons brown rice syrup)
1 tablespoon sesame oil
1 tablespoon ginger -- minced
3 tablespoons green onion -- minced
14 ounces firm tofu -- cubed
1 tablespoon hot chili paste
1 cup vegetable stock
1 tablespoon cornstarch mixed well with 2 tablespoons cold water
6 cups rice -- cooked Cilantro to garnish.
1. In a small bowl, mash black beans with garlic, soy, wine, and sugar.
2. In a wok or large skillet, heat oil on high and add black bean paste, ginger, and green onion.
Add tofu and turn gently.
Add chili paste and stock. Cover and cook for 3 to 4 minutes.
Stir in cornstarch mixture and cook until sauce thickens.
Serve over rice, and garnish with cilantro.
Makes about 6 servings.
Here's another:
Stir-Fried Spinach with Garlic
by the Editors of Easy Home Cooking Magazine
Ingredients:
2teaspoons peanut or vegetable oil
1large clove garlic, minced
6cups packed fresh spinach leaves (about 8 ounces)
2teaspoons soy sauce
1teaspoon rice vinegar
1/4teaspoon sugar
1teaspoon toasted sesame seeds*
Preparation:
1.Heat wok or large skillet over medium-high heat. Add oil; heat until hot. Add garlic; cook 1 minute.
2.Add spinach, soy sauce, vinegar and sugar; stir-fry 1 to 2 minutes until spinach is wilted. Sprinkle with sesame seeds.
And here's a basic recipe:

Ingredients...
700g fresh baby spinach
1 tbsp oil
½ tsp salt
1 tsp sugar
2 tsps garlic, finely chopped
Instructions...
Wash the spinach and drain well. Heat a large wok or pan to moderate heat. Add the oil, then add the salt & spinach. Stir fry for about 2 minutes to coat the leaves thoroughly with the oil and salt.
When the spinach has wilted add the garlic and sugar and continue to stir fry for another 4 minutes. Pour off any excess liquid before serving hot or cold.

The simplest garlic spinach would just be to lightly saute some chopped or smashed/chopped garlic in oil (olive oil tastes good for this). Then add your chopped fresh spinach and keep moving everything around till it's totally wilted.
"Italian spinach" is similar but has a few more things (onions and eggs)... and believe it or not, the best is even made from canned spinach --which otherwise I would not touch with a ten foot pole... works for this though.
... in that case, saute a half chopped onion with a few cloves of garlic
....squeeze out *most* of the liquid from a can of spinach and add it to the onion mix... stir around to break it up and heat through
....beat an egg or two separately, then add to the pan and stir briefly till the egg has cooked
(do not add any salt... there's already plenty in the canned spinach)
(this doesn't *look* all that good, but tastes really yummy)

1. take a garlic and smash/peel/slice (a)
2. Take a skillet and heat up some olive oil
3. Chop half an onion (I am assuming that you are cooking for 4)
4. Let the onion turn golden brown and then add the garlic
5. Then cook for 30 seconds and add the spinach
6. Add salt and pepper
7. Add a teaspoon full of any vinegar you have available and 1 teaspoon full mustard for flavor
8. Add a tiny amount (about a quarter of a cup) of water
9. cook till it looks done
10. ENJOY
If you want you can add some canned kidney beans, other baked beans, cilantro, cheese, mushrooms, diced tomatoes, boiled potatoes or mayo before serving
