Try this crab dip:
1/2 cup dried currants
Boiling water, as needed
1 pound cream cheese, softened
2 tablespoons Madras curry powder
2 tablespoons mayonnaise
1/3 cup coconut milk
1/3 cup minced green onions or chives
1/3 cup finely diced red bell pepper
1 pound backfin or claw blue crabmeat
Crackers or gingersnaps for serving
Preheat oven to 350 degrees F.
In a small bowl place the currants and just enough water to cover. Let stand for 15 minutes. Drain, reserving the liquid, and put the currants aside.
In a large bowl combine the cream cheese, curry powder, mayonnaise, coconut milk, green onion, and red bell pepper. Beat until smooth and somewhat creamy. Mix in the crabmeat, currants, and reserved currant liquid.
Transfer the mixture to a greased casserole dish and bake for 25 to 30 minutes. Serve hot or warm with melba rounds, water crackers, or ginger snaps.

Crab Louie Salad is the first thing that comes to mind.
Another fabulous meal is mixing your crabmeat with 8 oz cream cheese, garlic powder, green onions, sliced finely, and stuff the mixture into either chicken breast that has been slit opened or salmon fillets. Makes enough for 4 . Bake it until all is done, top with chopped tomatoes and parmasen cheese. It is wonderful.
Of course, there are wonderful crab dips that you could also use your crab in. Oh man, you are making me hungry!

Simple Crab Cakes
1/2 pound lump crabmeat
1/4 cup diced red bell pepper
1/2 fresh jalapeno, seeded and finely chopped
2 teaspoons old bay seasoning
2 - 3 tablespoons mayonnaise
2 cups fresh bread crumbs
1 egg, lightly beaten
salt & pepper
3 tablespoons vegetable oil
Carefully pick over the crabmeat feeling for bits of shell and cartilage and discarding them. Stir in the peppers, seasoning and mayonnaise. Stir in up to 1/2 cup of bread crumbs to mixture or as much is needed to bind ingredients. Shape into 4 - 6 cakes, depending on desired size. Place on a plate and chill for 1 hour in refrigerator. Dip each cake into beaten egg and then into bread crumbs and set aside. Heat oil in a non-stick skillet over medium high heat. Cook cakes on each side until golden brown. Serve warm with spicy mayonnaise

Crabmeat salad ....
use some Heinz Salad Cream
thinly sliced celery & celery seed
onion juice ... or some finely chopped onion ....s&p .... a little powdered garlic.....
it is great for this time of the year.....and it makes great sandwiches on hard rolls (Kaiser rolls) ... with some lettuce ...

Crabmeat Casserole
a white sauce made with milk heated with a little celery, allspice berries or black peppercorns (crushed, either one), a bay leaf and some pieces of onion (a tbs or two) ... and put a little white cheddar cheese also ....
mix with some egg noodles and season it .... bake ....serve with a sliced tomato salad dressed with plain oil and some s&p, a bit of onion (leave for 45 minutes bef serving it ..) ...and some crusty bread...

Seafood Chowder
1/2 lb of EACH: Scallops, Clams, Shrimp, Lobster or Crab*
3 onions, diced
4 cups potatoes, cubed
1 can evaporated milk
1 stalk celery, diced
3 cups milk
1/2 pound butter
1/4 tsp pepper
1/4 tsp savory
1 bay leaf
Cook onions, potatoes and celery, on low, in just enough water to cover, until almost done (about 10 -15 minutes).
Add seafood and cook unitl done. Add butter, salt, pepper, savory, bay leaf and milk.
Heat without boiling. Sprinkle with paprika.
Optional - add 1 or 2 strips of cooked and crumbly bacon.

Crab chowder! OMG, why do you have leftover crab??? Did you save the shells? You can make great stock out of that. Look at www.fishermansexpress.com. That's where my recipe comes from, only I don't use tomato, I sub red bell pepper. It's a staple in this house. Crab one night, crab chowder the next.

bake a several potatoes about 1 hr ( however many people are eating), wait till they are cool. cut off the first 1/4 of the potato and scoop out the insides into a bowl, leaving about 1/2 an inch from the skin. finely chop garlic, escallions bacon,salt pepper, thyme, cheese( any kind you want, most likely goat cheese or parm cheese something sharp) add to bowl with potato and mix well. gently add shredded crab meat, then add mixture back into potatoes, over stuffing them! bake potatoes for about 20 min or until golden on top.
it sounds like lots of work and ingredience, but trust me these are awsome stuffed potatoes!

I have two that I like -
Crab Dip - Take the crab meat mix it with mayo and cheddar cheese and bake. Serve with crackers or french bread.
Crab omelettes I know sound odd until you taste them - they're soooo good.
