I would make up a casserole or soup...extend your beef into a few more meals.
For me an easy casserole is to cut up the meat into bite sized pieces, cook some pasta or rice (whatever you have on hand), add some veggies (whatever you feel will go with the leftover meat), maybe sauté some diced onions too...Add a can of cream of "whatever" soup (i.e. mushroom, chicken, celery, whatever you have), and some shredded cheese maybe. Mix it all up and put into a casserole dish. Top with bread crumbs mixed with melted butter, if you like. And bake at 350 F for about 30 minutes or til bubbly.
You can put any twist you like on this, make it:
- Italian by using pasta with tomatoes, garlic, onions and such, I would omit the cream soup.
- Mexican can be made using pepper jack cheese, corn as a veg, sauté peppers and onions, add some spices like cumin, chili powder, etc.
- Americanized, broccoli, cheese, and cream of mushroom.
Soups are good and easy:
Open up some canned broth, add diced meat, frozen veggies, some herbs and voila more dinners. You could even add cooked small pasta or rice to this too.
Not sure what kind of beef you have but what about a quick shepherd's pie?

Cut the beef up into small pieces.
Take 1 can of mushroom soup, add 1/2 can of milk to make a sauce. Add the beef and heat it up. Serve on toast, potataoes, rice or pasta.

I made chicken-fried seitan a couple days ago with mashed potatoes and gravy. He loved it! Tofu weirds him out, but seitan has a much better texture. I suggest you try a fried seitan recipe. You can do so much with it also. It tasted great the next day in a sandwich. I'm sure it's equally nummy slathered in barbecue sauce. Or, you could try bbq pulled jackfruit. Let a can of jackfruit simmer in some bbq sauce for a couple hours, plop it in the fridge overnight to let the flavors sink in. I promise it will taste amazing!

What kind of beef?
You could do a tortilla wrap. You could cut it up with some potato and onion and make hash. Toss it into soup or chili. Make a pasta alfredo and toss it in. (I just did that with leftover veal. Can't let that go to waste!)
