I would make it just after you have prepped your meal & just before you start cooking it. I would slice the bananas & strawberries, right at the last minute...ENJOY!!!

I would make it a couple hrs before. I think it tastes best when some of the juices from the fruits have leached out and makes almost a natural sauce. Also it will give the fruit time to meld all the flavours together.

If your going to marinate it with mint or something else then I suggest at least one hour but no more than 2. If no flavoring is going to be added it can be made just before your event. Want to make it special? Cut a watermelon in half lengthwise and give it a flute edge or zig zag edge and cute out the flesh. Cube your fruit and add to rest of fruits and serve in the watermelon bowl.

I usually make it a few hours before I serve it. If it sits any longer it never tastes right.
