Rosehips are best picked after the first frost, when their fruit flesh turns soft and sticky. At this point they can be picked without a struggle and are much easier to process. try your local wild rose. Rosa canina, Rosa arkansana, Rosa californica are all good hip sources.

2 pounds hips minced-wash the hips well, pull off the stalks and put them in the grinder whole. You can run the hips through a food processor or a blender if you don't have a grinder.
Place in 6 C boiling water. Return to the boil then set aside at room temp (RT) for 15 min..
Pour into jelly bag and allow to drip until most of the liquid is through.
Return pulp to saucepan with another 3 C boiling water. Return to boil and set aside at RT for 10 min.
Put back into the jelly bag and allow to drip through.
Pour the whole collected volume back through the pulp one more time.
Now boil the juice down until only 3 C are left and add 1 1/4 C sugar and boil 5 more minutes.
Can as usual in sterile 1/2 pints.
This keeps only 1-2 weeks once open.
Use as desert flavoring or dilute for a drink.

Try rose jelly
3 lb hips Clean the fruit and leave whole
6 C sugar or honey
2 C water
Spices to taste ginger, cloves, cinnamon, ...
6 oz liquid pectin

Bring just fruit and water to boil over medium heat, mash fruit into water with potato ricer. Continue boiling 15 min.
Pour trough jelly bag til 5 cups juice recovered.
Add sugar to juice and bring to boil. Add pectin and boil 1 min. Remove from heat, skim foam and pour off into hot, sterile jelly jars and seal.

Yes you can, but it will take a lot of rose hips. You'll need to crush the rose hips to remove their juices, an apple press works very well for this, than set these juices over heat. You DO NOT want to bring to a boil. Just hot enough to start separation of water molecules. 90c should be hot enough. Let it heat at that temp for eight or nine hours and you'll end up with pure rose hip syrup. It's the same method as making maple syrup from sap.
