i need to quote this:

i know that in a long quotation, you need to set off the long quote, but how do i do it with 2 separate paragraphs?

If it's not poetry, I don't believe that you have to keep the original spacing. You do not use quotation marks and you indent the quote. See this link for more info.

It is grammatically proper to have a second set of quotation marks at the beginning of the second paragraph, avoiding quotation marks at the end of the first paragraph, but finishing the entire quote at the end.
" we believe that all men are created equal, that they are endowed with certain unalienable rights
"that among these rights are life, liberty, and the pursuit of happiness."
note the lack of quotation marks at the end of the first paragraph, but the finishing quotation marks at the end of the entire quote.

You can use italics for the entire quote and it will help seperate it out.
