What is the formula to cost out a brunch buffet menu.

Determine how many pans of each item is consumed in a week.

Determine how many customers come through in a week.

Determine the total cost of the consumed food and take into account some wastage, labor costs, location rental or mortgage, electricity, water, etc and include your expected rate of pay (your income) as part of the equation as well.

Divide the total cost by the number of customers in a week.

The way to figure any cost is to determine the cost of what it took to make each dish add it up then times that 2 and 1/2 times then divide how many servings
example

scramble eggs 5 dozen @ $1.39 per dozen= $6,95
toast 2 loafs bread @ $1.69 per loaf= $3.38
2 sticks butter @ .59 each= $1.18
Bacon 6 lbs bacon @ $4.69 each= $28.14
Total cost to make $38.65
Two and a half times that cost $ 96.62 Then divide how many servings, Lets say 12 servings, That gives you a price of $ 8.50 per person

When I've done it I've considered the following:

1. Number of guests
2. Number of dishes
3. Type of each dish broken down into how much each guest gets served.
4. Number of condiments and extras such as drinks
5. Extras such as linens and tables, cups, serving ware, flowers, etc. (rentals or purchases)
6. Add 10 to 30% for things like traveling, electricity, manpower etc.
