Is the regular class a prereq or can I jump into the management course. I hear the first day or the management covers all the of basics.....

Depends on the state and/or county you are in... contact the State Dept. of Health and ask them. The mgmt. course probably includes ample food safety, however, to cover the handlers' permit.

I got my Serv-Safe/HACCP certification while I was taking mgmt. Same class. It took a semester for the food handling in my case. I guess it depends on where you are.
