There is a great substitution for oyster sauce that you can find in vegetarian store...vegans uses 'mushroom sauce' to replace it, i would say there is a 80% similiarity.

You could use fish sauce.
Both smell four, but that indicates they are good to use. When they no longer smell it is a sign they have gone off, so I have been told.
If you want a new taste try to get Ketjap Manis it is Indonesian Sweet Soy Sauce. It may be in the International section at your supermarket. I love it with Fried Rice

Here ya go CHINESE BROCCOLI WITH OYSTER SAUCE 2 tbsp. oyster flavored sauce 1 tsp. sesame oil 3/4 lb. broccoli 8 c. water 1 tbsp. vegetable oil 1 tsp. salt Combine oyster sauce and sesame oil in a small bowl and set aside. Wash broccoli and cut into flowerets. Cut stems into thin slices diagonally. Bring water, vegetable oil and salt to a boil in large pot. Plunge broccoli into boiling water and cook for 4 minutes or until crisp. Drain well and place on a platter. Drizzle with oyster sauce.

Well that depends on what are you cooking? If you are thinking of marinating meat, try a good quality soy sauce and chinese Hua Tiao wine and sesame oil. It's perfect!

I use hoisin sauce and it makes a great substitute. If you can't find it at your local Asian supermarket, use this recipe.
4 tablespoons of soy sauce
2 tablespoons of Peanut Butter
2 teaspoons of Rice Vinegar (You can also use regular white distilled vinegar)
1 finely minced clove of garlic
1 teaspoon of Chinese hot sauce or Rooster Sauce
1 teaspoon of black pepper or more to taste

I would never eat it straight, either, but like it mixed in w/ other things to make Asian food. Try it. You probably eat it when you eat out.
or just use some Hoisin sauce, maybe.
