Here on the other side of the world we have the traditional Kiwi Sausage Roll.
Normally we would use puff pastry and sausage meat, but you could use filo pastry and chicken.
Lay out your filling from side to side across a sheet or two and roll up like sushi, tucking the sides in as you go.
I think that is what you call an egg roll.
You could use cold rice with the chicken or chowmein style veges.
Just deep fry or oven bake

try a chicken strudel. Take several sheets of phyllo and lay them out and butter them with melted butter. Top with the chicken, sauted mushrooms, onions, broccoli, and some shredded cheese. Top with several more sheets of buttered phyllo and roll up the edges. Bake at about 375-400 degrees until browned. Yummy!

Your own imagination is your only limit. You could add diced onion,mushrooms, grated cheese, even blend in cream cheese.Put a spoonful in the middle of your phyllo fold the edges towards the centre, so you have a little bundle, brush with a little butter, then bake in the oven just as you would with phyllo, and in no time you have your own "hot pocket" type treat that will be personalized to your own tastes, healthier and more economical than premade ones.good spices to thrown in...curry, dill weed,garlic, all are yummy

Yes, well wrap chicken and vegetables (like carrots or asparagus) with phyllo dough. Bake at a 325 degree oven for 15 minutes or until done.

I'd suggest making little triangle rolls stuffed w/ chicken, maybe some feta, goat, or cream cheese, maybe a bit of thawed (and squeezed dry) chopped spinach, and some herbs. Then roll up into a package (like folding a US flag) and bake. Good for appetizers or main dish!
