Chantal's New York Cheesecake
INGREDIENTS
* 15 graham crackers, crushed
* 2 tablespoons butter, melted
*
* 4 (8 ounce) packages cream cheese
* 1 1/2 cups white sugar
* 3/4 cup milk
* 4 eggs
* 1 cup sour cream
* 1 tablespoon vanilla extract
* 1/4 cup all-purpose flour
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Date Loaf Cake
"Very much like sticky date pudding - nice and moist, and made without eggs."
INGREDIENTS
* 1 cup dates, pitted and chopped
* 1 cup dark brown sugar
* 1/4 cup margarine
* 1 cup boiling water
* 1 3/4 cups self-rising flour
* 1 teaspoon baking soda
* 2 teaspoons vanilla extract
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9x5 inch loaf pan.
2. In a large bowl, combine dates, brown sugar, margarine and boiling water. Let stand 15 minutes. Stir in flour, soda and vanilla. Pour batter into prepared pan.
3. Bake in the preheated oven for 45 minutes. Allow to cool.

for a first cake try a mix and follow the directions carefully. Make sure you measure the oil correctly. let the eggs get to room temp. The water should be cool.

Check out the Edmonds cook book - otherwise the supermarket has some great instant cake packets. Just add egg/milk/water normally! Check out the baking section - you will find a really nice one that even has icing.

Strawberry Shortcake Bundt Cake
12-14 servings 1½ hours 15 min prep
Filling:
1 1/4 cups coarsely chopped strawberries
1/3 cup white sugar
2 tablespoons all-purpose flour
1 (8 ounce) package cream cheese, softened
1 egg
1 teaspoon pure vanilla extract
Cake:
1 cup unsalted butter, room temperature
2 cups sugar
4 eggs
1 tablespoon pure vanilla extract
1 cup buttermilk or soured milk
3 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 1/2 teaspoons baking powder
Vanilla Glaze:
2 cups sifted confectioners' sugar
1 teaspoon pure vanilla extract
1-2 tablespoon hot water
Soaking Syrup(instead of glaze or with glaze):
1 cup water
1 cup sugar
To sour milk, stir 1 tablespoon lemon juice with a cup of milk and let stand a minute.
Preheat to 350°F Butter a 12-cup Bundt pan and set aside.
Prepare the strawberries and set aside. In a food processor, cream the sugar and flour with the cream cheese until smooth. Stir in the egg and vanilla. Set aside.
Cream the butter with the sugar until light and fluffy. Fold in the vanilla, then blend in eggs, and process to blend batter well. Fold in the flour, salt, baking soda and baking powder together and add to the mixture, alternating with the buttermilk to make a smooth batter.
Spoon half of batter into prepared pan. Make sure the pan is big enough. I did this once and it ended up spilling out all over my oven. Spread reserved cream cheese filling all around top of batter (being careful not to touch edges). Sprinkle strawberries evenly over this. Top with remaining batter. Bake 60-75 minutes until cakes tests done. Let cool 15-20 minutes in pan before inverting onto a serving plate. Dust with confectioner's sugar or fondant.
For the Soaking Syrup, heat the sugar and water to a gentle boil in a small saucepan. Simmer 3 minutes and then cool to room temperature. Using a pastry brush, soak cake thoroughly, at least twice with this syrup.
For the Vanilla Glaze, whisk all ingredients in a small bowl adding hot water as required to make a pourable glaze. Drizzle over cake (that has syrup or not – up to you – the syrup makes the cake far more moist).
More often than not I just heat up a can of vanilla icing in the microwave for several seconds and spoon that over. It's still delicious.
This cake freezes well.

Serves/Makes: 10
Ingredients:
1 Box Yellow Cake Mix
1 large Box Frozen Strawberries
1 small Can Crushed Pineapple -- drained
1 small Box Vanilla Pudding Mix -- instant
8 ounces Cream Cheese
Peanuts
4 Bananas -- sliced
Cool Whip
Shredded Coconut
Directions:
Bake cake according to directions. Defrost the strawberries while cake is baking. Cool cake. Poke holes in the cake. Spread strawberries and can of pineapple on the cake.
Mix pudding according to directions. Blend in cream cheese. Spread over the cake. Sprinkle on the nuts. Arrange the sliced bananas on top of the cake, cover with Cool Whip, and sprinkle with coconut.

* Chocolate Glaze
* Sweetened whipped cream, for serving (optional)
* Chocolate shavings, for serving (optional)
Directions
1. Preheat oven to 350 degrees;. Butter an 8-inch round cake pan; line bottom with wax paper. Butter paper; dust with cocoa powder, tapping out excess; set aside.
2. In a medium bowl, sift together cocoa, flour, baking powder, and salt; set aside. In a mixing bowl, cream butter and sugar until light and fluffy. Beat in eggs, one at a time, then beat in vanilla. Reduce speed to low. Add flour mixture alternating with sour cream, starting and ending with the flour mixture.
3. Spread batter into prepared pan. Tap pan firmly on countertop several times to force out large air bubbles. Bake until a toothpick inserted in center comes out clean, 30 to 35 minutes. Remove from oven, Cool 10 minutes in pan, then invert onto a wire rack to cool completely (bottom side up). Set rack over a rimmed baking sheet. Pour glaze over; spread gently to coat entirely. Let stand until set. Garnish with chocolate shavings. Serve with whipped cream.
