Funny question, I actually made quesadilla's for my fraternity tonight... I actually have a quesadilla maker, so I dont have to cook it on the stovetop...But, if you have to... spray the pan lightly with like butter Pam or something of that sort...Lay one tortilla out first, let it slightly get warm before you put on the cheese, etc.
Tonight I actually made Shrimp and Avocado Quesadilla's tonight... I used Monterey Jack Cheese, Seasoned Shrimp, and Avocado slices inside... It was so good... I served them with Sour Cream and homemade Pico De Gallo...

The best way to make a quesadilla is to first have all your ingredients ready before you start. I like to use flour tortillas, grated cheddar cheese, grated parmesan cheese ( the kind in the green can ) and maybe some salsa and chopped green onions. First heat a griddle pan or large skillet over med - high heat. Then put a tortilla in and let one side heat for about 10 seconds, turn it over, and put your ingredient one only one half of the tortilla , then fold the other half over to cover the ingredients. let it cook for a minute or 2, turning it occasionally to make sure the tortilla is not burning! when the cheese is melted, and the tortilla is lightly browned, remove it fron the pan. You can top with more salsa and sour cream or not.

You can easily do this in a fry pan or even bake in the oven.
Just take your tortilla, spred some refried beans over all, sprinkle with shredded leftover chicken or even hamburger or just plain mexican mixed cheeses, (or all of the above)put the other tortilla over the top and bake (pan fry) until the cheese is melted, flip over, and brown the other side (although you really don't need to) Then quarter the tortilla into wedges and top with sour cream, salsa, sliced olives and eat!

I have 3 that we make a lot and after I fill them I fry them in olive oil they are amazing!! The toppings are important when you have company. They make your dish look somewhat impressive if you cut your quesedila up and add the toppings.
Pineapple and Cheese (surprisingly yummy)
Fry and sprinkle with a little cheese and a few chucks of pineapple
Spinach, onion, chicken, cheese, bacon and tomatos fry and top with a few spinach leaves, a few diced tomoatoes, and a few pieces of bacon
Taco meat, white cheese dip, cheese, onion, tomatos, peppers fry and top with a spoonful of white cheese, tomoatos and sour cream.

I make chicken ones. I put mexican style shredded cheese and cooked chicken pieces inside and heat it until the cheese melts. you can also add tomatoes, or leave out the chicken and just have cheese or sub it in for steak.
But I think that is one of those things that you can mess up....

you can put tons of things in those things! i usually add tomatoes, cheese, mushrooms, red peppers, and scallions. also, if you have any meats, you can add them to the mix.
i usually make mine w/ a bit of butter in a skillet.
