Brown 1 pound ground beef in a large pan, season with 1 tsp. salt, 1/2 tsp black pepper, 1 1/2 tsp cumin and 1 tbsp chili powder. Add diced onion and bell pepper. Cook it for a few minutes until the onions are cooked. Then I add a 14 oz. can of tomato sauce, 1 can diced tomatoes, 1 can each red kidney beans and black beans (pour the beans into a colander and rinse first). When it heats up to the boil, I taste to adjust salt and pepper and chili powder, and I add about 2 tsp cilantro or oregano, whichever you have. This is my basic chili recipe. Good luck, what a good daughter you are.

Basic Chili:

2¼ hours 15 min prep
4-6 servings

1 lb ground beef
1 yellow onion
2 red vine tomatoes
1 cubanelle pepper
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can kidney beans
1 (15 ounce) can stewed tomatoes
water
chili powder
red pepper flakes

1. Brown beef and remove from pot.
2. Caramelize onions in beef grease, add in fresh tomatoes.
3. When onions are caramelized, some add in all the other ingredients including beef but excluding pepper flakes and chili powder.
4. Let simmer and add flakes and powder every so often.

I use canned beans, because it's easy: Pinto, chili beans, kidney beans, some diced tomatoes, 1 pkg of chili seasoning, 1 can diced green chilis. I also add 1 lb ground hamburger meat browned with onions and green peppers. I also brown sausage and add to it.
