I am following a very healthy diet. Low carbs, vegs, fruits, water, fiber, never skip breakfast- etc. approx. 1200 calories a day. I am 5'4 and overweight @168. I do 115 crunches 2x everyday & well as do the air bicycle exercise .I walk a mile 6 days a week. It only takes me 20-25 min. to walk and some of it is uphill. I have lost weight and want to continue doing so. Does this routine sound OK or should I be doing more?

I would definitely up your calorie intake per day. You should not be going under 1500, especially if you are exercising. I would suggest changing up your routine as well.
Instead of doing 115 crunches twice a day (ouch!), try doing 30 regular sit ups and 30 leg lifts (lie on your back and lift your legs straight up until your butt is off the floor). Once you are done working on your frontal abs, move to the sides with side crunches, if you have weights, use 5-8 pounds (hold weight in one hand and crunch sideways on the same side as the weight, do 3 sets of ten on each side).
For your walking, you need to pick up the pace and go for a longer distance. A mile should take you between 15-20 minutes to walk and I would suggest walking for at least 30 minutes. When you are doing cardio, your heart rate needs to be elevated for 20-30 minutes to start burning fat.

eat 5-6 small meals a day (eat every 2-3 hours)
5-8 servings of fruit and veggies a day
8 glasses of water
have complex carbs for breakfast - they give you energy
have lean meat (protein) for dinner - repairs muscle
cardio exercise (jogging, running, cycling etc) 4-6 times a week for 30-50min (ideally 45min), light weight training, you only need to do crunches 2 times (muscle builds and recovers when its resting and that way you dont hurt yourself, and also crunches dont burn any fat so...)
dont consume foods that are made of white flour (white bread, cakes, past etc.), sugar loaded foods (cookies, icecream, candy etc) and nothing fried, oily.
ofcourse you can spoil yourself once in a while with a little treat:)
