Maybe because so many atheists explicitly state that they don't consider themselves to be spiritual. You can't seem to get everybody, atheist or not, to agree on what "spiritual" means.

Your definition of spirituality, as I understand it, is at least partly accurate. By that definition, many atheists have a great deal of spirituality. They just don't need it codified into a religion or need to imagine an invisible sky fairy to have it.
What spirituality is NOT is a belief in the supernatural or a belief in a deity. Those are seperate subjects entirely.

What Christians claim atheists have a lack of spirituality? I would say they have a lack of faith in the same God as me, but as I understand Spiritual formation it's the idea that we all have a spirit and just as our bodies are constantly being shaped by what we eat, how we exercise and the things we expose it to so is our soul or our spirit being shaped by what we think, what we learn and what we expose it to.
I believe each of us is equally spiritual regardless of what we believe. Your faith determines what you are choosing to form your spirit after. Does that make any sense?

I can't define spirituality in the Christian sense (I imagine it's simply a belief in the Father, Son and the Holy Ghost) but I do know Christians who claim atheists have no spiritulaity are judging the other person and condemning them for not having the same beliefs they do. It isn't what God wanted ("Judge not lest ye be judged") but there are some who are certain if they don't set another on the "right path" that person is condemned to hell forevermore. I say leave them alone and let God do what needs to be done. He doesn't need any help.

When believers talk about matters of the spirit, typically we are referring to the Holy Spirit which is where we look to and get our guidance from.
The worlds view of "being spiritual" is quite different and simply entails trying to channel the forces of the supernatural for possible insight and benefit. Or perhaps with an atheist, trying to be his own spiritual god.

We don`t "claim" any such thing ! You`re making the same mistake all unbelievers make in their assumption that Christians use the word "spirituality" in reference to someone not having it !! In the Christians vocabulary anything to do with "Spirituality" , means one thing and one thing only ; It is concerning GOD ! As an atheist doesn`t believe in God then they don`t have a "lack" of Spirituality , they are completely "void" of it !

When you don't believe in God or gods or an afterlife you are likely to become materialistic, trying to get as much pleasure as you can here and now.
That can mean pushing people out of the way in a rush to grab the best. And getting annoyed if people want you to share with the less well-off etc.
See the Wisdom of Solomon in the Old Testament Apocrypha. It shows where the atheist mindset can go.

All unbelief is judged via one situation, culpable as against inculpable lack of information. That such exists you are able to no longer dispute. yet who it applies to, in basic terms God knows. speaking for myself, I do observe an undesirable lot of atheists who do no longer even comprehend of the Church's coaching (that's meditated in Aristotle between others) that the life of God is knowable with fact via reason by myself. and not understanding that seems (to me) culpable terrific off the bat. To be spiritual, you must acknowledge the existence of a spirit or soul. Souls could not have evolved, so no atheist can acknowledge that they exist. Desiring personal growth and development is great, but is not spiritual in and of itself.
