I wondered if it went through the tunnel or on a ferry or do you just change on to another train?

You get off and take a normal ferry. There is an Orient Express lounge on board so you don't have to mix with the "common" people. You then get on another train in France.
Trains in Europe have a larger gauge (they are bigger) so would not be able to fit under bridges or next to platforms in England. That is why a special line has had to be built into London for Eurostar.
