There is nothing wrong with this if they are eating only when they are hungry, why eat when you don't feel hungry?

If you're asking if this is weird behavior - not necessarily, alot of people skip breakfast, and eat a small lunch and than eats at home.
Maybe she's broke and can't afford to buy a big lunch so she eats at home.
Thing about eating habits is that there is so many "theories" about the correct "quantity" and "frequency". Some people will say you should eat three meals a day. Some people say three meals with a snack between each one. Some people eat 5 small meals. Some people skip breakfast and have a coffee instead, a big lunch and a small dinner under the theory that you don't need the energy at night. Some people live in a constant state of starvation because they believe it will make them live longer (it is a proven fact that eating promotes quicker oxidation/aging of your cells... in studies rats that lived in a constant state of starvation lived much longer than rats that were fed regularily). And than there's people who work out so much that they must eat more. Most girls, need less calories than their boyfriends but go bite for bite...
So if you're asking if your friend's eating habits is weird... thats not really up to you to decide unless she/he is being self destructive. Anorexia has nothing to do with the time you eat, but its really a psychological disease where you are obsessed about food. You think about it constantly but don't want to eat it, it comes with body dysmorphia... it is not the act of "not eating as much as you think she/he should eat" but rather the mind set that you are fat even when you are thin or below normal weight. If that was what you were leading to, you have not offered enough information here for me to conclude your friend has any sort of an eating disorder.
My best friend never eats when we go out, because she can't afford to eat out. When this guy I was dating first noticed that, he thought she was anorexic. She's not, she couldn't care less about how much she weighed.

That is not good. Humans are suppose to eat. The best way to keep your metabolism up and have more energy is to eat every 2-3 hrs. Not big meals but snacks that are favorful and will satisfy you. At first it is hard to control but after 4-5 days your body will get used to it and let you know to eat frequently but smaller portions.

those are not healthy eating habits. the body needs nutrients every 3-4 hours in order for the metabolism to function normally

This is not healthy and sounds like anorexia. Encourage your friend to adopt a healthier diet and/or get help for her problem.
