Canola oil and Olive oil are the healthiest.
Also, to minimize your oil usage without radically chaning your cooking style you need to invest in some top end non-stick pans. The best I have found are Gastro BAF cookware out of Germany.

Canola oil is all the rave today, but there are quite a few raised eyebrows over a few discoveries about unwanted health affects that are associated with canola oil. I have cut oil completely out of my diet. I use EVOO (extra virgin olive oil) for home-made salad dressings and substitute water for half of the oil. Very rarely do I use EVOO, but I use "I can't believe it's not butter" spray for cooking as well as topping off foods. It tastes great and has zero calories and zero fats.

I would recomend flaxseed, or avocado oil. Try not to overdo them though. Olive oil is good for salad dressings but is not a true cooking oil as it burns at a lower temp than other oils, you can still use it but if you cook on non stick pans then avoid it as it will ruin the coating.
