Good luck with that. I am a obsessive compulsive, neat-freak. I appreciate the need for schedules and normalcy, really I do, but after having 3 children I have learned that sometimes it is easier to go with the flow than be organized. It is good to have some acitivities, but if you try to structure everything it may be stressful. There often times seem to be not enough hours in the day for schedules. Relax....have a fun summer without planning it. You'll never know the fun or memorable times that may just *happen*.

I would make a list of lots of different activities that they can do. Then use a website like FlyLady.com (she is a miracle with housework!) and get a general schedule. Then you have a list of different activities so that you can change plans and go with the flow as necessary but have some order to the summer. Hope that helps, good luck.

You can never organize a 2 year old
.. the 6-1/2 year old you can take to the library(which usually has a summer reading program for prizes), the park (to feed the ducks and play on the equipment, check your community events calendar for programs for kids his age and hit those stores for homeschoolers they have all kinds of activities and books to give him ahead start for the next grade he is attending in the fall.
