I seem to remember that we were once part of Great Britain and declared we were independent. Why can't Taiwan?

The people of Taiwan have been independent of China since 1949. China can declare ownership all it wants, but it won't get Taiwan back without a fight !
I fail to understand your dumb @ss analogy regarding Hawaii.
Hawaii is a state of the US. The residence of Hawaii have no further claim to it. They do not have a choice or a vote to reclaim their independence. They lost that, when they elected to allow Hawaii to become a state of the union !

If a bunch of White supremacist nutcases takes over the USA, but some patriotic Americans escape to Hawaii and declare a government of the United States in exile, do you expect the United Kingdom, or France, or Germany, or Mexico or Canada automatically to recognize the nazis as the legit rulers of Hawaii?

You are mistaken in saying that Taiwan has always belonged to China.
From 1624 to 1662, Taiwan belonged to the Dutch.
After various wars, Taiwan ended up under Chinese control, but then China ceded Taiwan to Japan in 1895.
Japanese sovereignty over Taiwan ended on April 28, 1952, with the coming into force of the San Francisco Peace Treaty.
According to recently released US government records, at the current time Taiwan is actually an overseas territory of the USA.

Taiwan is a free and independent country. We Americans tend to frown on big guys trying to take over other peoples countries. You need to talk to Germany, Japan and Italy and see what happened the last time.

If China goes democratic and the Taiwanese truely want to belong to mainland china again, then fine, in the meantime they do not want to be part of China so, hence the reason why we are involved.
