I have heard it said that if a person goes back to their home country for a 2 week period every six months that they are exempt from paying certain taxes for the purpose of sending remittance money home to family. Is this true and which tax is one exempt from paying? I am just trying to understand the structure of this system.

Legal immigrants are not exempt from any taxes. Illegal immigrants don't pay taxes because the government doesn't know they are in the US or how much money they are making. That's just one reason why illegal immigration is such a hot topic.

None. Make note of your source is being unreliable and untrustworthy and don't take any advice from them in the future. Legal or illegal, they all are subject to the same tax laws as everyone else is.
