I have a garlic and herb marinaded pork loin and am looking for side dish ideas other than the old stand by of potatos or rice.

Mom always used to make either mashed potatoes or egg noodles, especially the thin kind. I prefer the noodles, either thin or broad, because the gravy clings just fine and the taste is what I'm looking for. Think about maybe scalloped or au gratin potatoes if you're bored.

I love a fresh side dish with a hearty main like pork loin!

Make a spring salad with baby greens, raw snap peas, cucumber, tomato, and chopped fresh herbs (like dill or parsley). Serve a light vinaigrette dressing on the side.

Roasted or whipped sweet potatoes are my favorite side dish with roasted meats, but I also really like dressing/stuffing with dried cranberries. It's a lovely savory-tangy accompaniment for pork. You could also do an orzo salad, grilled zucchini, macaroni and cheese, sauteed green beans, roasted brussels sprouts with bacon, or basically anything you like.

classic apple sauce!

for 4 people use 6 large apples - tart cooking apples are fine, peel core and gently reduce with a dash of water in the begining to stop them burning, add a little light brown sugar as they begin to break down - enough to cover but only to take the acidity down a little, then as they get really musshy turn heat right down and add 50g unsalted butter, melt it into the apple, cook out for a couple of minutes and turn off heat, let the hot apples cool slightly and further combine with the apple. strain through muslin or very fine seive and serve cold with the pork.

Apple sauce is just about mandatory with pork. When I roast pork I go all out: roast potatoes, roast pumpkin, glazed carrots, peas and cauliflower with cheese sauce.

like both, fruits: berries, oranges, pears, peaches, dragonfruit, pomegranate.... Vegetables: CUCUMBERS, bok choy, green beans, broccoli,.... I actually guess the two are great.

baked potato and carrots and string bean mixed together steamed and use the gravy from the pork loin to add some flavor to it.
