Look you want to cook something that you will be able to sit and enjoy also so here is my idea.......it may seem simple but believe me it's good:

Simple salad

1 blood orange
1 Pink grapefruit
1 Avocado

Section the orange and grapefruit, slice the avocado thin as you can but not too thin......rub lemon juice on avocado slices to keep from turning........serve with a simple balsamic, olive oil and salt pepper dressing use sparingly (just a little).....place avocado down on plate add blood oranges then grapefruit.....this will look really nice like you broke your neck doing it.

But before all that.........bake some chicken breast that you have marinated in the following: Garlic, salt, pepper, red pepper flakes, olive oil, and orange juice place in zip lock for at least an hour or two..overnight if you can...remove from zip lock place in baking dish and add about a 1/2 cup orange juice, sprinkle extra pepper, cover with foil and bake (I over bake cause I like my chicken falling apart) about 90 mins or more ...If you like curry you may add a teaspoon full to the juice and you will have orange/curry chicken (the curry bake so it will release it's flavor or skip it altogether)..... this will add a smell to your house like a professional chef LOL anyway

Make some rice........I swear I would use rice a roni LOL.....cause it has a delicious flavor........

Get one can of sweet peas, one can sweet corn (not creamed) add together in a sauce pan.....add pepper, lots, and some salt and a teaspoon of sugar and some butter let heat.

I wrote this backwards sorta.......when all is done make the salad and then just serve everything else afterwards. Slice chicken breast for presentation LOL......looks like you know what ur doing LOL. You may use some of the pan juices on it but probably won't need it. Place some rice down and place peas and corn on top with some of the juice.....you won't need gravy....LOL

For dessert you should have a lemon cake......with some confectioner's sugar on it.....and a scoop of raspberry sorbet (in a separate dish or nice flute glass don't mix them)

Simple easy things, but it will taste like home cooked good food. Won't break the bank either.....but it may convince her you can cook and you may spent a lot more time in the kitchen LOL LOL.....

lobster lasagna

INGREDIENTS
1 (15 ounce) container ricotta cheese
2 eggs
2 cups shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup grated Parmesan cheese
1 medium onion, minced
1 tablespoon minced garlic
2 tablespoons chopped fresh parsley
1 teaspoon freshly ground black pepper
2 (16 ounce) jars Alfredo pasta sauce
16 no-boil lasagna noodles
2 pounds cooked and cubed lobster meat
1 (10 ounce) package baby spinach leaves
DIRECTIONS
Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, stir together the ricotta cheese, eggs, half of the Cheddar, half of the mozzarella cheese and half of the Parmesan cheese. Mix in the onion, garlic, parsley and pepper.
Spread 1 1/2 cups of Alfredo sauce in the bottom of the prepared baking dish. Top with a layer of lasagna noodles. Arrange 1/3 of the lobster meat over the noodles, cover with 1/3 of the ricotta cheese mixture, then 1/3 of the spinach and then another layer of Alfredo sauce. Repeat this process two more times ending with sauce on top. Sprinkle the remainder of the Cheddar, mozzarella and Parmesan cheeses over the top. Give the whole pan a gentle shake to get everything settled in.
Bake, covered loosely with aluminum foil, for 45 minutes in the preheated oven. Remove the foil and continue baking for an additional 10 minutes or until the top is browned. Let stand for 10 minutes before serving.

Ceasar salad ( you can buy a kit at the local grocery store

Chicken Parmasian: Chicken Breast ( I like the thin cut ones they cook faster) dipped in water or egg and cover with italian bread crumbs. Cook through and cover with mozzarella cheese til melted.

Serve over egg noodles with Spagetti sauce (Francisco Renaldi Three Cheese is really good). Can be served with Texas Toast, it adds a nice touch!

This will impress her and I have never known this recipe not to separate a woman from her underpants:

SAFFRON ORZO WITH ASPARAGUS AND PROSCIUTO
Yield: 6 servings

4 Tablespoons butter (1 /2 stick)
2 ounces thinly sliced prosciuto, cut into thin strips
1 1 /4 Cups Orzo (about 8 ounces)
3 Cups low-salt chicken broth
1 /2 teaspoon (loosely packed) saffron threads, crushed
1 pound slender asparagus, trimmed, cut into 1 /2" pieces
1 /4 Cup grated Parmesan Cheese
Parmesan Cheese Shavings, Optional

1. Melt 2 Tablespoons butter in a large, non-stick skillet over medium-high heat. Add prosciuto and saute until almost crisp, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.

2. Melt 2 Tablespoons in the same skillet over high heat. Add Orzo; stir 1 minute. Add broth and saffron; bring to a boil. Reduce heat to medium-low, cover, and simmer until orzo begins to soften, stirring occasionally, about 8 minutes. Add asparagus; cover and simmer until tender, about 5 minutes. Uncover and simmer until almost all of the liquid is absorbed, about 1 minute. Remove from heat.

3. Mix in prosciuto and 1 /4 cup of the grated cheese. Season to taste with salt and pepper. Transfer to a large bowl. Garnish with the Parmesan shavings.

how about steak with saute mushrooms and onions on top along with some pasta linguini noodles with alfredo sauce over them or a nice red marinade? and then maybe a nice small side salad with raw spinach leaves with cherry tomatoes, and some balsmic vingarette dressing? maybe fore dessert make it simple and serve a scoop of her fave kind of ice cream place it in a martini shaped glass and then add a mint leave to it? candle light dinner i would say white candles with red or white table cloth. and maybe play her fave band album?

Fire up that grill and throw on a nice sirloin steak with some veggies. You just cant mess that up!!! If you have a privacy fence, just put on the apron and let her watch you work that grill and I bet, that's not all the work you will have to do.
