I hear ya! I'm the same way....I'm always scared to try new things but sometimes you need to be daring. I normally stick to anything that has chicken. Chicken Parmesan is really good!!!!!!!!!!!!!!!!!!!

I would suggest for an appetizer either Antipasto or the Calamari. For an entree I would recommend trying Veal Marsala. It is a lightly breaded veal sauteed with marsala wine, butter and mushrooms. End the meal with a Tiramisu and a cup of coffee.

Well my suggestions would be my favorite Italian meal which is Chicken Risotto which is an Italian rice which I recommend that they cook the rice well done, meaning you don't want it too soft. Also another favorite is Tutto Marre made with tortellini noodles which around here in St.Louis has shrimp, and crab

I am a professional chef who went to culinary school in Italy and this is my OWN recipe for pasta sauce and meatballs. Treat it with respect and don't substitute. You can use any pasta noodle for this recipe. It's all good
Ingredients
2 15 oz cans of stewed tomatoes: italian style
4 8oz cans of tomato sauce
1 T basil
1 T oregano
1/2 t rosemary
1 t salt
1/2 t ground pepper
1/2 vidalia onion, minced
3 cloves of garlic, minced
1/3 pound ground veal
1/3 pound ground pork
1/3 pound ground beef
1 T olive oil
1 ham hock
1 T sugar
1 T honey
1 cup of heavy cream or half and half
In a blender, blend for 5 seconds the two cans of stewed tomatoes and add them to a VERY large sauce pot. add the 4 cans of tomato sauce and heat on medium. stir in the basil, oregano, rosemary, salt and pepper. meanwhile in a large fry pan heat up the olive oil on high heat. fry the onions and garlic but do NOT let them turn brown. sprinkle a little bit or oregano and basil on the frying onions. add all your meat and brown throughly. stir in 4oz of water and then pour the entire contents, grease and all, into the large saucepan.
Score your hamhock in a tic tac toe pattern all along the skin areas. Place a little more olive oil into the pan and fry hamhock until brown on all sides (fry the ends too!!) then toss into the pot.
Add the sugar and honey and taste. The sauce should NOT be acidic. it should taste slightly sweet with a clean finish. by this point your sauce should be barely boiling. reduce heat to low and begin to simmer for 2 hours. 15 minutes before your sauce is done add in the cream and stir well.
MEATBALLS
1/3 pound veal
1/3 pound pork
1/3 pound beef
1 egg
1/2 C breadcrumbs
1 clove of garlic finely minced
1/4 C water
1 t pepper
1 t salt
2oz romano cheese
Mix all ingredients together until well blended then begin rolling into balls slightly smaller than golf balls. in the same fry pan you cooked the meat in, put a little more olive oil in it and fry until brown on all sides. then add them to the sauce to finish cooking for the duration of the 2 1/2 hour simmering time.
