Depends on the dish.
For example, if you replace thanksgiving turkey with thanks giving chicken then that'll be just plain and simple wrong. But if you replace KFC with KFT (Turkey) then that'll be a sad change as well.
But personally I like to have chicken more often than turkey.

Eating hot I prefer chicken. For sandwiches sliced turkey (sorry retropink).

It is all a matter of taste, but I personally prefer chicken. More flavour and succulent.
