An apex generally refers to a high point, which might be another term for a climax, referring of course to an orgasm.

Sure it does. An apex is a climax, or the highest point achieved...like in a career. Climax would refer to an orgasm during sex.

The etymology is obvious if you break it down. Apex is a combination of the word "ape" and the word "sex", so apex clearly refers to wild monkey sex, which, I am given to understand, involves eating fermented fruit and swinging from trees.

That word isn't in the lyrics of that song. I've listened to it and read lyrics and I just don't see it anywhere. Am I missing something?

Wait, I found it.. the context of the whole song is sex, but it definitely is a sexual reference of the orgasm (female) because the preceding lyrics are for the orgasm (male).

Never reach the top. Can't think of it have anything to do with sex. You may be confusing it with climax, which can have a lot to do with sex.
