I've been to all three and would have to say Italy is best. However Southern Germany is very special. France would pull last place however that isn't saying you wouldn't be very happy there.
Tell you this, which ever language you speak the best will probably give you the best trip. Backpacking requires you to meet people who have very limited English skills. Unlike the cities where you wouldn't have much of a problem, it's the opposite in the countryside.

Been there done that and would do it again in a heartbeat. They are all great. France is neat to backpack around in, Germany has great pedestrian areas and great beer...lol. and Italy ahhhhhhh Italy. Italy would probably be the least expensive, Germany the easiest to get around in and France the most diverse. You won't go wrong in any of them.

I've been to Italy and France, but not Germany. I pick Italy, more night life and better food.

I have been to Italy and France and would definitely say Italy is better. It is absolutely gorgeous and I found the people more hospitable. :-)

I've been to all three...I'm an American, but I speak fairly good german, so traveling there has always been easy, but I have to say Italy is my favorite. Viarregio, Pisa, Lucca, Florence, and Venice was my trip last summer. Food was awesome everywhere!
