LB Kevin Greene of the Rams, 49ers, Steelers and Panthers was a walk-on at Auburn. He won a starting spot at defensive end for the Tigers. He then went on to have a successful career in the NFL as a blitzing LB. In 1988 he sacked Joe Montana 4 times in the first quarter of one game.
Greene retired in 1999. As for current players - I don't know who were walk-ons, if any.
