I know my Ammonia should be at 0 would should my Nitrite and Nitrate be at?

nitrite should be 0, nitrate is a little loose .50 is acceptable some kits come with a colour code that ranges from white, yellow moving up to bright red obviously anything above yellow is of great concern.

Plants will use Nitrate so your only real concern with that is how you get rid of the access and save yourself the problem of algae, you may also find you tap water may have nitrate in it.

Nitrate is probably always going to be present in your tank, at least if it's a healthy, cycled tank. Nitrate is the end product when bacteria consumes the ammonia and then the nitrite. The only things that can lower it are live plants and water changes.

If it builds up too high, it is unhealthy and can cause fungus, infections, and susceptibility to parasites. Different fish require different levels of cleanness. For example, goldfish, bettas, and livebearers seem to be able to cope with it at higher levels of around 40 mg/l. Tetras and cories and other popular community fish do much better if you keep it below 25 mg/l. Some advanced care fish like discus can really only thrive if you keep the levels closer to 5 mg/l.

Test your water two or three times a week, do a partial water change when the nitrate is getting high, and after a few weeks you should feel very familiar with your tank's cycle length. Then, you should only have to check the levels every now and then, or when your fish seem to be behaving differently.

Both Ammonia and Nitrate at 0 will lead to a healthy tank, and healthy fish.

nitrate- 0 to 40 = safe { going up unsafe}
nitrite - 0 safe
.5 caution
1.0 to 4.9 stress
5.0 up danger

Nitrate is safe below 40 ppm, but is better at 0
