In all honesty coyotes tend to stay away from anything larger than them.

Ranchers will use donkeys and llamas (see llamas more) instead of dogs to guard livestock.

If you have ever been kicked by hoofstock you would understand why coyotes will stay away. Either of the two (llamas, donkeys) could kill a coyote with a single kick. I have heard of many cases of coyotes being kicked in the head and breaking their jaw/teeth. It does not kill the coyote but it is enough damage that they can no longer hunt, kill or eat... thus they starve.
