The problem is that my game's edges look messed up and my computer won't allow me to change it... why is my resolution so high? I have a wide/flat screen monitor and when I tried to put it at 800x600 it looked too big.

1024 x768 is too weird looking; it makes the screen really narrow. My graphics card automatically sets the screen resolution to 1280x960

Wide screen monitors are great for watching movies, but not much else.
Most computer games like the Sims are formatted to display correctly using 800x600(VGA) displays because this was a default size for many years on CRT 4:3 aspect ratio monitors.
Until recently most LCD monitors also used a 4:3 aspect ratio, although the native resolution (actual number of physical pixels making up the screen ) was 1280x1024. To change to 800x600 wasn't that big a problem because although the resolution changed, the aspect ratio (size of screen width in relation to height) was not changing. You were shrinking or stretching the image evenly in all directions.
Wide screen monitors like yours employ 16:9 aspect ratio, so the computer needs to stretch the image unevenly, creating distortion.
Most monitors like Acer, LG, etc. will allow you to display a 4:3 aspect ratio image correclty.
Right click on your desktop, select "Properties", select and click on the "Settings" tab, at the bottom, use the slider to select the appropriate resolution, in your case 800x600

Alot of times when you start a game it automatically resets your resolution to 800X600 then returns it to normal when you exit the game. Nothing to worry about.

well even if u set the res to 800*600 in windows, it still will be the same quality in The sims,
What Video Card do u have, as this mite be affecting it

Being legally blind, I understand your situation. Set it to 800x600 (the smallest there is), then decrease than the administration panel there is "Accessibility strategies", flow by a wizard that would make your font, icons, cursor, each and every thing larger. in case you dont' desire to do it that way, flow into your residences (the place you alter the screensaver, wallpaper, etc), and decrease than the visual charm tab click greater and you will make larger man or woman issues (icon, menu font).

try the other shortcut to sims for 1200x 600 or something. Its in the same folder. good luck!
