I keep seeing words like triethanolamine and diethylmethylamine... but what exactly is that chemical?

An amine is a nitrogen with three groups attatched. Thus, triethanolamine would be: (CH3CHOH)3N

And diethylmethylamine: (CH3CH2)2NCH3

An amine is something with a R-NH2 group a R-NHR group or a R-NR2 group (R being alkyl)

It can also be aryl - but then you have the anilides - a special class of amines - aromatic amines Ar-NH2 or Ar-NHR or Ar-NR2.

The Nitrogen can also be part of the ring as in pyrrole an

An amine is any organic molecule that contains either an -NH2, a -NHR, or a -NR2 functional group. For example CH3CH2NH2 would fall into the -NH2 classification and is called ethylamine. CH3CH2NHCH3 would fall into the -NHR class and is called N-methy-N-ethylamine. (CH3CH2)3N would fall into the -NR2 class and is called triethylamine. I hope this helps.
